These gourmet-style burgers take lean kangaroo meat and infuse it with the vibrant flavours of Asian cuisine—soy sauce, ginger, garlic, and sesame oil—then top it off with crunchy slaw and a drizzle of sriracha mayo. The result is a burger that’s tender, juicy, and completely unforgettable.
Perfectly grilled and served on toasted brioche buns with fresh herbs, these burgers deliver a unique twist on the classic BBQ favourite.

1 lb ground kangaroo meat

2 cloves garlic, minced

1 tablespoon grated ginger

1 tablespoon soy sauce

1 teaspoon sesame oil

1/2 teaspoon chili flakes (optional)

1/2 teaspoon black pepper

1 tablespoon cornstarch (to help bind the meat)

4 brioche buns, toasted

1 cup Asian slaw (mix of cabbage, carrots, and green onions with rice vinegar & sesame dressing)

1 fresh cucumber

4 tablespoons sriracha mayo

Fresh cilantro leaves

Ingredients

In a bowl, mix ground kangaroo meat with garlic, ginger, soy sauce, sesame oil, chili flakes (if using), black pepper, and cornstarch. Combine well and form into 4 equal-sized patties.

Preheat a grill or skillet to medium-high heat. Cook the patties for about 4–5 minutes per side, or until browned and cooked through. Kangaroo is very lean, so be careful not to overcook.

While the burgers are grilling, toast the brioche buns until golden.

To assemble, spread a spoonful of sriracha mayo on the bottom bun, place the kangaroo patty on top, then layer with crunchy Asian slaw, a few cilantro leaves, a generous sprinkle of Nutri Green microgreens, and ribbons of fresh cucumber.

Top with the other half of the bun and serve with a lime wedge on the side for a zesty finish.
