200g beef tenderloin or top sirloin, trimmed and finely diced

1 egg yolk, very fresh

1 teaspoon Dijon mustard

1 teaspoon Worcestershire sauce

1 tablespoon capers, finely chopped

1 tablespoon shallots, finely minced

1 tablespoon parsley or chives, finely chopped

Salt and black pepper, to taste

1 teaspoon olive oil

½ teaspoon lemon juice

Optional: dash of hot sauce

Directions

Begin by ensuring all ingredients are chilled, especially the beef. Use a sharp knife to finely dice the beef into small, even pieces. Place in a chilled bowl.

In a small mixing bowl, whisk together Dijon mustard, Worcestershire, lemon juice, olive oil, and a touch of hot sauce if desired. Pour this dressing over the beef and gently mix.

Add in the chopped shallots, capers, and herbs. Season with salt and freshly cracked pepper to taste. Mix carefully to avoid overworking the meat.

Use a ring mold or shape the tartare by hand into a neat round mound on a chilled plate. Make a small indentation on top and gently place the egg yolk in the center.
