Ingredients

1.5 lbs boneless chicken thighs or breasts, cut into bite-sized pieces

Salt and pepper, to taste

1/3 cup cornstarch, for coating

2 tablespoons vegetable oil, for pan frying

For the Honey Sriracha Glaze

3 tablespoons honey
-
2 tablespoons sriracha
-
1 tablespoon soy sauce
-
1 tablespoon rice vinegar or lime juice

2 cloves garlic, minced

1 teaspoon grated ginger

To Finish

1 tablespoon sesame seeds

2 green onions, thinly sliced

Directions

Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear chicken for 4–5 minutes per side, until golden brown and cooked through. Remove and set aside.

In the same pan, lower the heat and add butter. Sauté garlic until fragrant, about 30 seconds. Stir in sun-dried tomatoes and cook for another minute.

Pour in the chicken broth and cream, scraping up any browned bits from the bottom of the pan. Bring to a simmer, then stir in parmesan and Italian seasoning. Let the sauce cook for 3–4 minutes until slightly thickened.

Add baby spinach and stir until wilted. Return chicken to the skillet and spoon sauce over the top. Simmer gently for another 5 minutes to blend flavors and reheat chicken.

Plate and garnish with Nutri Green microgreens and fresh basil or parsley. Serve with pasta, mashed potatoes, or crusty bread to soak up the sauce.
