Ingredients

300g linguine

3 tablespoons olive oil

4 cloves garlic, thinly sliced

Zest of 1 lemon

Juice of ½ lemon

1/4 teaspoon red pepper flakes (optional for a little heat)

1/4 cup grated parmesan cheese

1/4 cup fresh parsley, finely chopped

Salt and cracked black pepper, to taste

Directions

Bring a large pot of salted water to a boil and cook linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

In a large skillet, heat olive oil over medium heat. Add the sliced garlic and red pepper flakes (if using). Sauté until the garlic is golden and fragrant—about 1 minute.

Add in the cooked linguine, lemon zest, and lemon juice. Toss everything together, adding a splash of reserved pasta water to help emulsify the sauce and coat the noodles.

Stir in the parmesan and chopped parsley, and season to taste with salt and freshly cracked black pepper.

Plate and top with a final drizzle of olive oil, a sprinkle of parmesan, and a generous handful of Nutri Green microgreens. Serve immediately with lemon wedges on the side for an extra zing.
