Lemon Herb Garlic Linguinie with fresh Nutri Green Microgreens

This simple yet elegant linguine recipe is packed with flavour from sautéed garlic, fresh parsley, and vibrant lemon zest. Tossed with high-quality olive oil and finished with a sprinkle of parmesan and a handful of microgreens, it’s the perfect balance of freshness and comfort.

 

Ideal as a standalone vegetarian main or served as a base for grilled chicken, seafood, or roasted vegetables, this dish is quick to prepare and delivers big on flavour with just a few ingredients.

Lemon Herb Garlic Linguine is a beautiful example of minimalist Italian cooking—simple ingredients treated with care, resulting in a fragrant and satisfying dish that’s ready in under 30 minutes.

Ingredients

  • 300g linguine

  • 3 tablespoons olive oil

  • 4 cloves garlic, thinly sliced

  • Zest of 1 lemon

  • Juice of ½ lemon

  • 1/4 teaspoon red pepper flakes (optional for a little heat)

  • 1/4 cup grated parmesan cheese

  • 1/4 cup fresh parsley, finely chopped

  • Salt and cracked black pepper, to taste

  • Nutri Green Arugula Microgreens

  • Extra lemon wedges, for serving

Directions

  1. Bring a large pot of salted water to a boil and cook linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
     

  2. In a large skillet, heat olive oil over medium heat. Add the sliced garlic and red pepper flakes (if using). Sauté until the garlic is golden and fragrant—about 1 minute.
     

  3. Add in the cooked linguine, lemon zest, and lemon juice. Toss everything together, adding a splash of reserved pasta water to help emulsify the sauce and coat the noodles.
     

  4. Stir in the parmesan and chopped parsley, and season to taste with salt and freshly cracked black pepper.
     

  5. Plate and top with a final drizzle of olive oil, a sprinkle of parmesan, and a generous handful of Nutri Green microgreens. Serve immediately with lemon wedges on the side for an extra zing.
     

  6. Top with Nutri Green microgreens of your choice!
