Seasoned Steak & Roasted Garlic Mash with fresh Nutri Green Microgreens

Seasoned Steak with Roasted Garlic Mash is all about simple techniques and bold flavours.

 

The steak is pan-seared or grilled to perfection and paired with buttery mashed potatoes blended with roasted garlic cloves for deep, mellow flavour. A modern twist on a timeless classic.

This dish pairs a perfectly seared steak—seasoned simply with salt, pepper, and herbs—with rich, creamy mashed potatoes loaded with sweet, roasted garlic. It’s a rustic yet refined combination that delivers comfort and indulgence in every bite.

 

Topped with a pat of herb butter, seasonal veg, and a sprinkle of microgreens, it’s a stunning plate that’s easy enough for weeknight cooking and elegant enough for entertaining.

Ingredients

  • 2 ribeye, striploin, or sirloin steaks

  • Salt and cracked black pepper, to taste

  • 1 tablespoon olive oil

  • 1 tablespoon butter

  • 2 cloves garlic, smashed

  • 2 sprigs fresh rosemary or thyme

  • Roasted Garlic Mash

  • 4 medium Yukon Gold potatoes, peeled and cubed

  • 1 small head of garlic

  • 2 tablespoons butter

  • 1/3 cup heavy cream or milk

  • Salt, to taste

  • Nutri Green Triton Radish Microgreens

  • Optional: herb butter or pan jus, & seasonal veg

Directions

  1. Preheat oven to 400°F (200°C). Slice the top off a head of garlic to expose the cloves, drizzle with olive oil, wrap in foil, and roast for 30 minutes or until soft and golden. Let cool slightly and squeeze out the roasted cloves.
     

  2. Meanwhile, boil peeled and cubed potatoes in salted water until fork-tender, about 15–20 minutes. Drain, mash, and mix in butter, cream, salt, and the roasted garlic cloves until smooth and fluffy. Set aside, covered to keep warm.
     

  3. Pat steaks dry and season generously with salt and cracked pepper on both sides.
     

  4. Heat olive oil in a cast-iron skillet over high heat. Once hot, sear the steaks for 3–4 minutes per side for medium-rare, depending on thickness. In the last minute, add butter, smashed garlic cloves, and fresh herbs. Baste the steaks with the melted butter for extra flavour.
     

  5. Let steaks rest for 5 minutes before serving.
     

  6. Plate with a generous scoop of roasted garlic mash, top the steak with a pat of herb butter or spoonful of pan jus, seasonal veg, and garnish with Nutri Green microgreens for a fresh contrast.
     

  7. Top with Nutri Green microgreens of your choice!
