4 boneless, skinless chicken thighs or breasts

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

½ teaspoon cayenne pepper (optional for heat)

1 teaspoon salt

½ teaspoon cracked black pepper

Juice of ½ lemon

In a bowl, whisk together olive oil, paprika, garlic powder, onion powder, cumin, cayenne, salt, pepper, and lemon juice to form a marinade.

Add chicken and coat thoroughly. Cover and marinate in the fridge for at least 30 minutes (or up to 8 hours for deeper flavour).

Preheat grill to medium-high. Grill chicken for 5–6 minutes per side, or until cooked through and nicely charred with crisp edges. Internal temp should reach 165°F (74°C).

Remove from grill and rest for 5 minutes. Squeeze fresh lemon juice over the top.
