Classic Chicken Pot Pie

A rich, creamy, and comforting classic wrapped in golden, flaky pastry.

This classic chicken pot pie is the definition of comfort food done right. Tender chunks of chicken are simmered in a creamy, savory gravy with carrots, peas, and herbs, then tucked beneath a buttery, golden pastry crust. Each bite delivers warmth, richness, and nostalgia, making it perfect for cozy dinners or feeding a crowd. It’s hearty, satisfying, and timeless, a dish that never goes out of style.

Ingredients

  • 2 cups cooked chicken (roasted or shredded)

  • 1 sheet puff pastry or pie crust

  • 2 tbsp butter

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 2 carrots, diced

  • 1 cup frozen peas

  • 2 tbsp all-purpose flour

  • 1 1/2 cups chicken broth

  • 1/2 cup milk or cream

  • 1 tsp dried thyme

  • Salt & black pepper to taste

  • 1 egg (for egg wash)

Directions

  1. Preheat Oven:
    Preheat oven to 400°F (200°C).
     

  2. Cook the Filling:
    In a skillet, melt butter over medium heat. Add onion, garlic, and carrots. Cook until softened (5–7 minutes).
     

  3. Make the Sauce:
    Stir in flour and cook for 1 minute. Slowly add chicken broth and milk, stirring until thickened.
     

  4. Add Chicken & Veggies:
    Stir in chicken, peas, thyme, salt, and pepper. Simmer for 5 minutes until creamy.
     

  5. Assemble the Pie:
    Transfer filling to a baking dish. Lay pastry over top, trimming edges and sealing. Cut small slits for steam.
     

  6. Egg Wash & Bake:
    Brush pastry with beaten egg. Bake for 25–30 minutes until golden and bubbling.
     

  7. Rest & Serve:
    Let sit for 5–10 minutes before serving.

Snow Pea Shoots

Peas are a powerhouse of nutrition and strong anti-oxidants. Peas have such high quality protein that they are now added to many meals and commercial protein products. In taste pea tendril microgreens are slightly sweet, with a mild bitter aftertaste, and they have a nutty undertone.  The leaves have a texture similar to spinach, although not as delicate. Pea tendrils add freshness and a little crunch to dishes with rich and earthy flavours.
