3 cups watermelon, cubed

1/2 cup feta cheese, crumbled

1/2 cucumber, thinly sliced

1 tbsp olive oil

For the Dressing:

1 tbsp honey

1 tbsp fresh lime or lemon juice

1 tsp olive oil

Directions

Toast the Sesame Seeds:
In a dry skillet over medium heat, toast sesame seeds until golden. Set aside.

Make the Dressing:
In a small bowl, whisk together honey, citrus juice, olive oil, salt, and pepper.

In a large bowl, combine watermelon, cucumber, and mint.
