Crispy Potato Latkes with Sour Cream

Golden, crispy potato pancakes with a cool, creamy finish.

These classic potato latkes are crispy on the outside, soft and tender on the inside, and packed with savory flavor. Made from freshly grated potatoes and lightly seasoned, they’re pan-fried to golden perfection for that irresistible crunch. Served with cool, tangy sour cream, each bite delivers the perfect contrast of hot and crispy with smooth and refreshing. Whether for brunch, a side dish, or a comfort snack, these latkes are simple, satisfying, and always a crowd favorite.

Ingredients

  • 4 medium russet potatoes, peeled and grated

  • 1 small onion, grated

  • 2 eggs

  • 1/4 cup all-purpose flour

  • Salt & black pepper to taste

  • Oil for frying (vegetable or canola)

  • To Serve:

  • 1/2 cup sour cream

  • chopped chive & fresh dill

  • Optional: lemon wedges

Directions

  1. Prep the Potatoes:
    Grate potatoes and onion, then place in a clean towel and squeeze out as much liquid as possible.
     

  2. Make the Mixture:
    In a bowl, combine grated potato mixture with eggs, flour, salt, and pepper. Mix well.
     

  3. Heat the Oil:
    Heat a thin layer of oil in a skillet over medium-high heat.
     

  4. Form & Fry:
    Scoop small portions of the mixture into the pan, flattening slightly. Fry for 3–4 minutes per side until golden brown and crispy.
     

  5. Drain:
    Transfer to a paper towel-lined plate to remove excess oil.
     

  6. Serve:
    Serve hot with a dollop of sour cream and optional herbs or lemon. Top with microgreens.
