BLT Avocado Sandwich with Whole Grain Mustard

This upgraded BLT brings together all the classics with a modern, flavor-packed twist. Crispy, smoky bacon meets juicy ripe tomatoes, crisp lettuce, crisp arugula microgreens and buttery avocado for the perfect balance of texture and richness. Finished with a spread of whole grain mustard, it adds a tangy, slightly sharp bite that cuts through the fat and ties everything together beautifully. Built on toasted bread, this sandwich is hearty, satisfying, and packed with fresh, vibrant flavor — perfect for lunch, brunch, or an easy gourmet bite.

Ingredients

  • 4 slices bread (sourdough or multigrain), toasted

  • 6–8 slices bacon

  • 1 large tomato, sliced

  • 1 ripe avocado, sliced

  • 1 cup lettuce (romaine, butter lettuce, or iceberg)

  • 1 cup arugula microgreens 

  • 2 tbsp whole grain mustard

  • 1 tbsp mayonnaise (optional, for extra creaminess)

  • Salt & black pepper to taste

Directions

  1. Cook the Bacon:
    In a skillet over medium heat, cook bacon until crispy. Transfer to paper towel to drain.
     

  2. Prepare the Bread:
    Toast bread until golden and crisp.
     

  3. Build the Base:
    Spread whole grain mustard (and mayo if using) on one or both sides of the bread.
     

  4. Layer the Ingredients:
    Start with lettuce, then tomato slices (season lightly with salt and pepper), followed by avocado and crispy bacon top with microgreens. 
     

  5. Assemble & Serve:
    Top with remaining bread, slice in half, and serve immediately.
