Guacamole, Pico de Gallo & Egg Burrito

This flavor-packed breakfast burrito brings together creamy guacamole, zesty pico de gallo, and soft scrambled eggs, all wrapped in a warm tortilla for the perfect handheld bite. The richness of the eggs and avocado is balanced by the bright acidity of fresh tomatoes, lime, and onion, while cilantro microgreens add a fresh, citrusy finish that lifts the entire dish. It’s hearty, refreshing, and incredibly satisfying — ideal for breakfast, brunch, or a quick, wholesome meal on the go.

Ingredients

  • For the Burrito:

  • 2 large flour tortillas

  • 4 eggs

  • 1 tbsp butter or oil

  • Salt & black pepper to taste
     

  • For the Guacamole:

  • 1 ripe avocado

  • 1 tbsp lime juice

  • Salt to taste
     

  • For the Pico de Gallo:

  • 1 cup diced tomatoes

  • 1/4 cup red onion, finely chopped

  • 1 tbsp fresh cilantro, chopped

  • 1 tbsp lime juice

  • Salt to taste
     

  • To Finish:

  • 1/2 cup cilantro microgreens

  •  shredded cheese & hot sauce
     

Directions

  1. Make the Guacamole:
    Mash avocado with lime juice and salt until smooth but slightly chunky. Set aside.
     

  2. Prepare the Pico:
    In a bowl, mix tomatoes, red onion, cilantro, lime juice, and salt. Set aside.
     

  3. Cook the Eggs:
    In a skillet over medium heat, melt butter. Whisk eggs with salt and pepper, then scramble gently until soft and fluffy.
     

  4. Warm the Tortillas:
    Heat tortillas in a dry pan or microwave until warm and pliable.
     

  5. Assemble the Burritos:
    Spread guacamole across the center of each tortilla. Add scrambled eggs, pico de gallo, and a generous handful of cilantro microgreens.
     

  6. Wrap & Serve:
    Fold in the sides, roll tightly into a burrito, and serve immediately.
