Classic Shakshuka 

Rich, spiced tomato eggs finished with fresh herbs and vibrant microgreens.

This classic shakshuka is a bold, comforting dish of gently poached eggs nestled in a rich, spiced tomato and pepper sauce. Infused with garlic, paprika, and cumin, the sauce delivers deep, warming flavor while the eggs remain soft and velvety. Finished with fresh herbs and a generous handful of cilantro microgreens, the dish is lifted with a bright, citrusy freshness that balances the richness perfectly. Served with warm bread for dipping, it’s a simple yet deeply satisfying meal for breakfast, brunch, or dinner.

Ingredients

  • 2 tbsp olive oil

  • 1 small onion, diced

  • 1 red bell pepper, sliced

  • 2 garlic cloves, minced

  • 1 tsp paprika

  • 1/2 tsp cumin

  • 1/2 tsp chili flakes (optional)

  • 1 can (14 oz) crushed tomatoes

  • Salt & black pepper to taste

  • 4 eggs

  • 1/2 cup cilantro microgreens

  • To Serve:

  • Fresh parsley 
     

  • Crusty bread or pita

Directions

  1. Sauté the Base:
    Heat olive oil in a skillet over medium heat. Add onion and bell pepper, cooking until soft (5–7 minutes). Stir in garlic.
     

  2. Add Spices:
    Add paprika, cumin, and chili flakes. Cook for 1 minute until fragrant.
     

  3. Simmer the Sauce:
    Pour in crushed tomatoes, season with salt and pepper, and simmer for 10–15 minutes until slightly thickened.
     

  4. Add the Eggs:
    Make small wells in the sauce and crack eggs into each. Cover and cook until whites are set but yolks remain soft.
     

  5. Finish & Serve:
    Remove from heat and top with a generous handful of cilantro microgreens. Serve immediately with warm bread.
