Ingredients

2 tbsp olive oil

1 small onion, diced

1 red bell pepper, sliced

2 garlic cloves, minced

1 tsp paprika

1/2 tsp cumin

1/2 tsp chili flakes (optional)

1 can (14 oz) crushed tomatoes

Salt & black pepper to taste

4 eggs

1/2 cup cilantro microgreens

To Serve:

Fresh parsley

Crusty bread or pita

Sauté the Base:
Heat olive oil in a skillet over medium heat. Add onion and bell pepper, cooking until soft (5–7 minutes). Stir in garlic.

Add Spices:
Add paprika, cumin, and chili flakes. Cook for 1 minute until fragrant.

Simmer the Sauce:
Pour in crushed tomatoes, season with salt and pepper, and simmer for 10–15 minutes until slightly thickened.

Add the Eggs:
Make small wells in the sauce and crack eggs into each. Cover and cook until whites are set but yolks remain soft.

Finish & Serve:
Remove from heat and top with a generous handful of cilantro microgreens. Serve immediately with warm bread.
